Vermicelli Upma
Preparation time:30 mins

Ingredients of Vermicelli Upma

·      ·       2 Cups Thin vermicelli
·      ·       2 Tbsps. Refined oil
·      ·       1 tsp Mustard seeds
·      ·       1 tsp Cumin seeds
·      ·       1 Tbsp. Urad dal
·      ·       2 Green chillies (splited lengthwise)
·      ·       9-10 Curry leaves
·      ·       1 Onion, sliced
·      ·       1/2 Cup Beans, chopped
·      ·       1/2 Cup Carrots, chopped
·      ·       1/2 Cup Fresh peas
·      ·       1/2 Cup Tomato puree
·      ·       1/2 tsp Turmeric powder
·      ·       To taste Salt
·      ·       2 Tbsp Peanuts, roasted
   
METHOD:
·       1. Heat a wok or a kadai and roast the vermicelli for 3-4 minutes until slightly golden. Transfer to a plate and keep aside.
·       2. Now heat oil in the same kadai and add urad dal, mustard and cumin seeds. Let them crackle for a minute and add the chillies and curry leaves. Saute for 1-2 minutes and add the onions. Mix well.
·       3. Add turmeric powder and salt and saute for 1-2 minutes. Then add the vegetables and stir well. Allow them to cook for 3-4 minutes.
·       4. Add the tomato puree and 2 1/2 cups of water, and bring to a rolling boil. Add the vermicelli and mix well. Cover the kadai with a lid and let it cook for 5-6 minutes or until the vermicelli is cooked and the water is dried up.
·       5. Check seasoning. Transfer to a serving bowl and finish with roasted peanuts on top and a fresh green chilli. Serve immediately.

EaSY BREAD POHA:
Ingredients Of Easy Bread Poha

·       2 Tbsp Oil
·       1/8 tsp Hing
·       1 tsp Mustard seeds
·       5-6 Curry leaves
·       2 Whole red chillies
·       1 cups Cookes peas
·       1/2 cups Peanuts, roasted
·       1 tsp Turmeric powder
·       1 tsp Salt
·       4 nos Bread, chopped
·       2 Green chillies
·       1 tbsp Lemon juice
·       1/2 cups Coriander leaves
·       Dessicated coconut
·        
Method:
·       1.Take a pan and put some oil in it for heating
·       2.When the oil is hot, add Hing to it.
·       3.Add Mustard seeds, curry leaves and whole red chilllies. 4.Saute them for a while and add cooked green peas
·       5.Now add roasted peanuts to the mixture and cook it until golden brow
·       6.Add turmeric powder and salt. Mix and put the bread slices into it.
·       7.Mix them and sprinkle some water over it before adding the green chillies, lemon juice and coriander leaves in the end for a tangy taste.
·       8.Garnish with dessicated coconut and serve hot.

Eggless Pancakes Recipe

How to make Eggless Pancakes

Ingredients Of Eggless Pancakes

 

·       1 Cup Maida
·       1 tsp Sugar
·       1/2 Salt
·       2 tsp Baking powder
·       1 Cup Milk
·       3 Tbsp Oil
·       1 tsp Vanilla essence
·       To cook the pancakes Oil
·       Method:
·       1.Mix flour, sugar, salt, baking powder, milk, oil, vanilla essence and enough water to form a smooth paste. The batter should be of a coating consistency. Add more water if required.
·       2.Take a frying pan of about 6'-7' diameter and heat oil in it.
·       3.When the oil gets hot, turn over the pan and drain the excess oil off it.
·       4.Increase the heat again, and pour batter in the pan.
·       5.Lower the heat and cover the pan for about 10 seconds. Uncover the pan.
·       6.When edges of the pancake start lifting on its own, the pancake is done.
·       7.Just loosen the edges and turn the pan upside down over a plate and serve.

Besan ka Cheela Recipe


·       Recipe Servings: 2

INGREDIENTS

 

·       1 Cup Besan
·       1 Cup Water
·       2 tsp Salt
·       1/2 Onion, sliced
·       1 tsp Chilli powder
·       1 tsp Ajwain
·       1 Green chilli
·       1/2 Cup Methi leaves, finely chopped
·       4 tsp Oil (for frying)

Method:

·       1.Mix all the ingredients, except oil, to a thick pouring consistency, adding the water a little at a time.
·       2.Leave to rest for 15-20 minutes.
·       3.Heat a tbsp or so of oil in a frying pan, then pour it off into a container.
·       4.Keeping the heat high pour some batter in the center of the pan, spreading it out a little.
·       5.Lower the heat and let cook till the edges brown a little and can be lifted easily.
·       6.Dribble a little oil around it, turning the pan so the oil goes under the cheela.
·       7.Flip it over to cook slightly on the other side and before serving it hot with a green chutney.

Bombay Toasty Recipe


How to make Bombay Toasty

INGREDIENTS

 

·       4 Brown bread slices
·       50 gram butter
·       1 Onion (sliced), peeled
·       1 Capsicum (de-seeded), sliced
·       1 Tomato, sliced
·       1 Cucumber, sliced
·       1 Potato (sliced), boiled
·       30 ml mint chutney
·       to taste salt
·       to taste chaat masala

Method:

·       1.Butter the bread slices.
·       2.Put a layer of mint chutney on the bread.
·       3.Put potatoes, cucumber, onion, capsicum and tomato slices.
·       4.Season with salt and chaat masala.
·       5.Heat the frying pan and a teaspoon of butter.
·       6.Toast the sandwiches on both sides till crispy brown.
·       7.Serve crispy sandwiches along with some potato fries.

Masala Cheese French Toast.

INGREDIENTS

·       3 Tbsp Chilli tomato ketchup
·       1 tsp Mustard
·       2 Tbsp Mayonnaise
·       3 slices White or brown bread
·       4 slices Cheese
·       4 Egg whites
·       1 Spring onion
·       2 Green chillies
·       Few Coriander leaves
·       2-3 Basil leaves
·       1 Bunch Chives, small
·       To taste Salt
·       To cook Olive oil

Method:

·       1.Herb paste: In a blender make a paste of spring onions, basil, green chillies, coriander and chives.
·       2.Sauce paste: In a bowl mix chilli tomato ketchup, mustard and mayonnaise.
·       3.Egg mixture: In another bowl whisk egg whites with a little salt. Add the herb paste.
·       4.Take a bread slice. Apply the sauce paste and place 2 cheese slices. Place another sauce smothered bread. Repeat. Chill for 2-3 minutes.
·       5.Dip the bread-cheese-sauce sandwich in the egg mixture.
·       6.In a pan add some olive oil and cook the french toast till golden brown on both sides.
·       7.Cut into fingers and serve.

SEMOLINA UPMA
How to make

·       Ingredients 
·       250 Gram Semolina
·       650 Ml Water
·       75 Gram Ghee
·       5 Gram Mustard seeds
·       2 Gram Black gram dal
·       2 Gram Bengal gram dal
·       100 Gram Onions
·       5 Gram Green chillies
·       25 Gram Cashew nuts
·       2 Gram Curry leaves salt
·       Garnishing:
·       Coriander leaves
·       Coconut, grated

Method:

·       1.Boil water.
·       2.Slice onions and cut the chillies lengthwise.
·       3.Heat a deep pan with ghee. Add mustard, when crackling add the dals and sauté until golden.
·       4.Add onions, curry leaves, cashew nuts and green chillies. When the onions are translucent add semolina and sauté.
·       5.Add the boiling water and stir rapidly with the salt. When the moisture is absorbed, the upma is cooked.
·       6.Mix well and garnish with grated coconut and coriander leaves.


Egg and cheese toast:

Servings : 2
Preparation Time: 15 mins

 Ingredients of Egg and Cheese Toast
1. 2 Boiled eggs
2. 2 Raw eggs
3. 4 slices  bread
4. 50 gms cheese, grated
5.   2 green chillies chopped
6.  1 Tbsp butter
7. ¼ lemon
8. 1 tsp chilli powder
9. 2sprigs of curry leaves
10. salt and pepper to taste

METHOD:

1.  Cut the boiled eges into small pieces.
2.  To this add grated cheese,raw eggs,green chillies,curry leaves,chili powder,lemon juice , salt , pepper and mix all  nicely.
3.  Apply butter on two bread slices and then spread above mixture onto them. Cover with the remaining bread slices. Toast the sandwiches in sandwich maker or on tawa.
4.  Serve with tomato ketchup.

DAL VADA WITH MINT CHUTNEY

PREPARATION TIME: 40 mins
SERVINGS: 3 TO 4 PEOPLE

Ingredients of dal vada and mint chutney

1.  200 gms (soaked for ½ an hour)
2.   25 gms (soaked for ½ an hour)
3.  1 onion
4.  4 – 5 green chillies
5.  2 sprigs curry leaves
6.  30 gms ginger
7.  ½ bunch mint leaves
8.  75gms coconuts
9.  ½ cup coriander leaves
10.                1 lemon
11.                15 gms garlics
12.                salt to taste
13.                tomato ketchup

Method
1.First chop the onions, green chillies and ginger and keep aside.
2. Coarsely grind the soaked dal, onions ,ginger AND  curry leaves with salt in mixture grinder.
3. Divide the mixture into medium sized balls. Press each ball into flat round vadas.
4. heat oil in a kadai  or frying pan and fry the vadas golden brow
 Mint Chutney:
Grind mint leaves,coriander leaves, lemon juice , coconut, garlic and salt to taste to make the chutney.Add a little tomato ketchup.
Serve the hot  vadas with mint chutney.


DHOKLA
 PREPARATION TIME :35 mins
SERVINGS : 6 TO 8 people.

INGREDIENTS:
Rice : 3 cups
Urad dal: 1  cup
Green chilli paste : 1tsp

Soda-bi-carb : ¾ tsp
Oil : 3 Tbsp
Asafoetida :1/4 tsp
Black pepper powder: 1 tsp
Salt to taste

METHOD:

1.  Wash rice and urad dal and keep it aside to dry.
2.  Grind into pouring consistency
3.  Ferment the mixture overnight
4.  Add green chilli paste, asafoetida,soda-bi- carb and salt to the batter
5.  Grease a thali , pour the batter to fill half its height.
6.  Sprinkle a pinch of black pepper powder on it and steam for 10 mins
7.  Cut into small pieces and serve it with mint chutney..

PRAWN CUTLET: INGREDIENTS: ·        6 prawns(500 gm approx) ·        2 tablespoon ginger and garlic paste ·        2 teaspoon coriander and Green chilli paste ·        2 teaspoon garam masala powder ·        salt as required ·        3 tablespoon onion paste ·        2 egg ·        Corn flour as required ·        2 cup bread crumbs ·        refined oil for deep frying METHOD: ·     In a large bowl add ginger and garlic paste, onion paste, coriander and green chilli paste, garam masala powder, eggs and salt. ·     Mix all the ingredients well and dip the prawn pieces into the bowl.
