BHETKI MACHER PATURI:




Prep time: 45 mins
Cook time: 15 to 16 mins
Serves: 8 peoples

INGREDIENTS :
Bhetki (Barramundi) Fish Fillet - 800 grams ( 8 Pieces)
Banana Leaves - 4 big cuts into halves.
Grated Fresh Coconut - 1/2 Cup
Turmeric Powder - 1 tsp
Lemon juice - Half lemon
Mustard Oil - 4 TBsp.
Green Chillies - 8 for decoration
Salt to taste



MAKE A PASTE OF:

Black Mustard seeds - 3TBsp
Yellow Mustard seeds - 2 TBsp
Poppy seeds - 2 TBsp
Green chillies - 5 to 6

Soak all the above ingredients for 1/2 an hour and then make a paste of it, later this will be used as 2nd marination.


METHOD:

Take the boneless bhetki fish fillets and wash it and squeeze all excess water.
Now marinate the boneless fish fillets with salt and lemon juice. Nicely coat it on both sides. Keep aside for 10 minutes.
After 10 mins add the second marinate of mustard paste, mustard oil, turmeric powder, coconut paste, and salt to the fish fillet and keep it aside for 15 mins.



  • HOW TO PREPARE THE BANANA LEAF BEFORE WRAPPING THE FISH:


First, remove the stem of the banana leaves and wash them nicely from both sides.
Cut the banana leaves into 2 halves to nicely fold and make the packets.
Now turn on the oven flame to slightly roast both the sides of the banana leaves.


  • How to wrap and cook bhetki(barramundi) fish in banana leaf :
Now take each piece of Banana leaf then put the fish fillet along with the mustard paste ,put a teaspoon of  mustard oil and a whole green chilli on top of the fish.
Fold the banana leaf making a packet. If you are not confident then you can tie a thread around the wrapped packet.

Heat a kadai or a skillet on medium heat.Once you feel the pan is nicely heated add a teaspoon of oil in it and spread it over the pan.
Now put the wrapped packets one by one as many your pan can fit.



Slow down the flame and cover the kadhai with the lid, after 10 mins remove the lid and turn the packet upside down and cook for more 4 to 6 mins.
when both sides are properly cooked turn off the heat. It may take 14 to 16 mins cook the fish properly.




Hot steamed rice is the ideal accompany with bhetki macher paturi.

 Moong Dal With LAU (LAUKI) :YELLOW LENTIL WITH BOTTLE GOURD. A very old and traditional bengali recipe.
