PAN POACHED FISH WITH VEGETABLES:


Ingredients:

1 Medium or small Betki(Barramundi) fish or fillets of  Basa fish or any fish of your choice.
3 Tablespoon Olive oil.
1 Onion(sliced).
1/2 cup capsicum and  bell peppers
1/2 cup carrot.
1/2 cup potatoes
1 Tablespoon Mayonaise
2 cloves
2 garlic (sliced)
1Tablespoon of Parsely or dill.
1Tablespoon of lemon juice.
sliced lemon for decoration
2 Bay leaf
Salt and Pepper as per taste


Method:
  1.  Heat a Frying pan that has a cover. Peel and slice an onion. Add in 2-3 tablespoons of olive oil and saute the sliced onion. Add other fresh or frozen vegetables such as capsicum, bell peppers, carrots, and potatoes, add salt and cover it till it is done.
  2. You can add peas, zucchini, broccoli or cauliflower.
  3. In a separate pan add clove and sliced fresh garlic in the water for poaching fish.
  4. Add the fish and season with salt, pepper, lemon juice, bay leaf or herbs like parsley. Cover and cook until the fish is done. If your fish is whole or fillets are thick, you may want to turn it over after ten minutes or so. 
  5. If the fillets are thin they could be done in 5-10 minutes.
  6. Your vegetables might still be crisp, depending on how small you cut them. Add a little Mayonaise to the vegetables for a creamy texture.
  7. The fish is cooked when the juices run clear.
  8. Sprinkle parsley and serve with lemon.
