SANDESH
Bengali dessert (mishti) is incomplete without a Sandesh. It is easy to make at home and almost every Bengalee knows to make it. Since its main ingredient is fresh paneer it needs to be consumed quickly as it tends to get spoiled. A mold is used to make a different pattern. Mishti Doi(sweet curd) and Sandesh is the most famous dessert among other Bengali desserts known to the world.

Prep time:15 minutes.
Cook time: 10 minutes
Serves: 10 to 12 

INGREDIENTS:

Fresh Paneer/Chana: 400 gms
Almonds: 12 cuts in slices
Saffron strands: 4
Milk(warm): 1Tbsp(to soak saffron)
Powdered Sugar: 1/2 cup
Milk Powder: 2 tsp
Pistachio essence: 1/2 tsp
Cardamom Powder: 1/2 tsp
Ghee: 1Tbsp

METHOD:

  • Soak almonds, saffron, pistachio essence in warm milk.
  • Mix paneer and milk powder in a pan and cook in medium flame for almost 5 to 7 minutes.
  • After cooking for 5 minutes allow it to cool down.
  • Now add powdered sugar, essence, cardamom powder, and mix well until it turns into a smooth dough.
  • Lightly grease the molds with ghee.

  • Put the toppings(almonds, saffron, or pista) in the molds.
  • Take the paneer dough and press it on the mold until it takes the shape of the mold.
  • Unmold and cool it for few hours and serve.
