CHICKEN ROAST

ROASTED CHICKEN WITH APPLES & POTATOES :

PREP TIME: 15 MINUTES
ROASTING: 1 HOUR(APPROX)
SERVES: 8



INGREDIENTS:
Chicken:11/2 kg (boneless or with bone as you prefer, skinless)cut into big pieces.
Butter : 3 Tbsp (softened)
Coriander leaves: 2 to 3 Tbsp (chopped)
Onion: 1large(chopped or finely sliced)
Apples:3 to 4 medium sizes (750gm), cored and cut into 8 wedges.
Baby Potatoes: 10 to 12(750 gms), cut into half.
Lemon juice: 2 tsp
Salt and Pepper as per taste.

METHOD:

  • Preheat oven to 230 degrees.
  • In a bowl take 1 Tbsp butter, 1Tbsp chopped coriander leaves, 2 tsp of lemon juice, 1/2 tsp salt, and 1/2 tsp of coarsely ground pepper. Mix all ingredients well.
  • Now pour this mixture over the chicken and rub it nicely. 
  • In a baking pan, melt the remaining butter in the oven.
  • Now remove the pan from the oven, add potatoes, onions,1/2 tsp of salt and remaining chopped coriander leaves. 
  • Push the potatoes and onions at the edge of the pan and make space for the chickens to be roasted. Roast for 20  to 25 minutes.
  • Now add the apples to the pan around the chicken pieces and roast it more 30 to 40 minutes.
  • After roasting is over transfer the chicken to a platter.
  • Next, add the cooked potatoes and apples.
  • Pour the pan drippings into a cup and serve it with the chicken. 

This a very healthy recipe and if anyone wants to make it without butter can easily do so but definitely butter adds little taste to the dish. One can add other vegetables like carrots, french beans, etc. Instead of baby potatoes one can add sweet potatoes also.

 Moong Dal With LAU (LAUKI) :YELLOW LENTIL WITH BOTTLE GOURD. A very old and traditional bengali recipe. Mostly prepared during summers , it is said that this dal keeps the body cool and prevents us from heat. This is a very light to stomach recipe with minimum ingrediants.
