BROCCOLI LOW FAT SOUP:
Prep time: 5 mins
Cook time: 30 mins
Serves: 6 people
INGREDIENTS:
OLIVE OIL - 2 TSP
ONION = 1/2 Medium (finely chopped)
CELERY STALK = 1 (finely chopped)
BROCCOLI = 4cups(finely chopped)
POTATO = 1 medium.
VEG OR CHICKEN BROTH = 2 cups
MILK = 11/2 cups
METHOD:

OLIVE OIL - 2 TSP
ONION = 1/2 Medium (finely chopped)
CELERY STALK = 1 (finely chopped)
BROCCOLI = 4cups(finely chopped)
POTATO = 1 medium.
VEG OR CHICKEN BROTH = 2 cups
MILK = 11/2 cups
METHOD:
- Heat oil in a soup pot.
- Saute celery, and onion for 4 to 5 minutes or until onion is softened.
- Now add potatoes and broccoli, followed by the broth, and then mix the milk.
- Let it boil and reduce the flame and simmer for 20 to 25 minutes or until vegetables are softened and cooked properly.
- After the soup is cooked now cool it and then blend it in a blender until it is smooth.
- Again transfer it in a soup bowl and reheat gently and serve it hot.
- Add salt and pepper according to your taste.
