DESSERT: INSTANT MALPUA

INSTANT MALPUA: for the festive season PREP TIME:20 MINUTES COOK TIME: 12 MINS SERVES: 10 INGREDIENTS: Maida: 1 cup Milk Powder: 1/2 cup Semolina/Suji/Rava: 2tbsp Fennel/Mouri/Saunf: 1/2 tsp Milk: 1 cup Dry fruits chopped(optional) Oil for frying For sugar syrup: Sugar: 1 cup Water: 1/2 cup Elaichi/ Cardamom Powder: 1/2 tsp METHOD: In a big bowl pour dry ingredients maida, milk powder, suji, and crushed saunf. Pour 1 cup milk in the big bowl and mix it well, if required add a little more milk. Make a smooth thick yet running consistency batter. Rest the batter for about 15 minutes. Now heat oil for deep frying. Oil should be medium hot. Pour the batter with a ladle in the hot oil. When one side is properly fried, flip over and cook the other side too. Drain the oil properly and dip it in warm sugar syrup which is already made. Soak both sides 5 minutes each till it absorbs sugar syrup properly. DESSERT: INSTANT JALEBI

INSTANT JALEBI RECIPE   : Preparation time: 10 mins Cooking Time: 15mins Serve: 10   INGREDIENTS: Maida: 1 cup Curd: 2 Tbsp Oil or Desi ghee: For frying Desi ghee: 1 tsp Food colour: 1 pinch(orange) Cardamom powder: 1/2 tsp Eno or Baking soda: 1/2 tsp Sugar: 500 grams Saffron: 1 pinch METHOD: First in a bowl mix maida and curd nicely then slowly add water and make a batter with ribbon-like dripping consistency. Now add 1 tsp ghee and mix. Then add the food colour and mix well. Now add eno or baking powder and mix it well in a circular motion and cover and keep it aside. Pour the batter in a tomato ketchup bottle or a plastic cone. Heat oil or ghee in a pan. Squeeze the bottle and make round spirals with the batter. When one side is nicely cooked turn over to cook the other side, fry it till the jalebis are golden in colour. Immediately drop the fried jalebis in warm sugar syrup, rest it for 30 seconds. Serve it hot or in room temperature.
