HOMEMADE NARAM PAKER SANDESH

If Rosogolla is the queen of sweets then Sandesh is the king of Bengalee desert. Sandesh is of various kinds like Kacha Golla or Makha Sandesh, Kora Paker Sandesh, Norom Paker Sandesh, Talsansh, etc. Generally, Sandesh is made mixing Chena(homemade paneer), sugar or Jaggery, and then set in different spaced moulds among them Sankh Sandesh and Aata Sandesh are famous.
Bhola Moira aka Bholanath Modok's name is a must mention as he was not only a famous kabiwal (poetry singer) he was famous for making Sandesh like his son-in-law Nobin Chandra Das was famous for inventing spongy Rosogolla. Later many other sweet makers made many other sweet delicacies like Surjo Modok made Jol bhora Talshash, Rabri Sandesh by Sen Mahasay(Ashutosh Sen), Sorpuria By Adhar Chandra Das of Adhar Mishtanna Bhandar, etc. Bengal is full of famous sweet dishes starting from Sandesh, Rosogolla to Mishti Doi, and full of renowned Sweet shops like Chittaranjan, Balaram, Bancharam, Dwarik, Ganguram, Nakur Chandra Nandi, and Girish Chandra dey, etc.
If you are not from Bengal don't keep yourself deprived of West Bengal's sweet dishes here is an easy recipe of Sandesh my way maybe this is not the authentic one but you will get the happiness of having Sandesh from West Bengal.


INGREDIENTS:


 Milk: 1&1/2 liter
Lemon: 2
Sugar: 1/4th cup
Milk Powder: 1/4th cup
Cardamom Powder: 1 tsp(optional)

METHOD:

First, squeeze the juice of 2 lemons and dilute it mixing with the same amount of water and keep it aside. Boil the entire milk and when starts boiling take 1/2 cup of milk and keep aside.
Now in the boiling milk slowing add the lemon water mixture and stir it continuously till it starts curdling.
When it curdles fully strain it and wash it with water thoroughly so that the sourness of lemon goes.








In a Kadai or pan pour the 1/2 cup milk which was kept aside when little hot add the entire chena(paneer) and mix well.
At this point add the sugar and milk powder and stir thoroughly till it dries up a bit.
Now take the mixture on a plate and knead it nicely into a smooth dough.

Make small balls from the dough and give the shape of your choice you can use moulds to make it easier.

 Otherwise, you can make small tikkis shape and make the design on it with toothpicks or keep it plain.









Delicious Naram Paker Sandesh is ready to enjoy.
